We make this Easy Peanut Butter & Honey Popcorn Crunch recipe at LEAST once a week….and it usually doesn’t last ’til the end of the day! It’s so quick to make, the ingredients are simple (and usually on hand), and my kiddos love to help out with each step. It’s a great “healthier” option than cookies or candy….and even though peanut butter and honey do not top the list of super-foods, there are nutritional benefits to both. Depending what brand/type of ingredients you use, it can be GMO, gluten, and processed – sugar free!
**As with many recipes, I don’t measure the ingredients when I make this Peanut Butter Honey Crunch popcorn. For the sake of this blog, I will give you the “standard” measurements, but find what proportions you like best. Maybe a little more honey….maybe a little more peanut butter…..maybe no cinnamon….whatever works! Play with the ingredients, and then maybe find a few new additions!**
Let’s Do This!!!
3/4 cup peanut butter
1/2 cup honey
1 teaspoon cinnamon
1 teaspoon vanilla
16 cups (or just a BIG BOWL full!)
- Heat the first 4 ingredients in a saucepan over low heat. It doesn’t have to boil, but you want all ingredients to melt together and get warm enough to stir into popcorn.
- Stir it into popcorn.
- Spread the popcorn in a single layer on a cookie sheet (you will probably have enough popcorn for two cookie sheets), bake at 300 for about 10 – 15 minutes, depending on how “baked in” you want the flavor. I find 12 minutes to be just right for me. But i’m also using an archaic oven from 1976, so who knows what temperature I’m REALLY baking my popcorn at?
- Let it cool on the cookie sheet for about 10 minutes, then put it in a bowl and watch it DISAPPEAR!!!
It’s so yummy AS IS….but feel free to find your own mix-ins to personalize your sweet & salty popcorn munch. We love to add dried cranberries and unsweetened large-flake coconut. It’s also great with pumpkin seeds (you can add those before baking), peanuts, M&Ms, and pretzels! Be creative, find a fun mixture for your family, and enjoy a movie together with your new personalized snack mix!
