Let’s Do This: Super Easy Brownie Mix Cookies
Heat oven to 350 degrees. **Line your cookie sheet with parchment paper.** Trust me on this.
- Brownie Mix (regular 9X9 size…not the FAMILY size, unless you want to adjust the oil/water measurements)
- 1/2 cup oil
- 2 eggs
- 1/4 cup water or coffee (cooled) **The coffee amplifies the chocolate flavor – you can’t even detect it after the cookies are baked.
Put everything in a bowl, and mix up the batter. It will be thick – no worries. If you would like a FLATTER cookie, just add a bit more water or coffee. But don’t add too much. You do not want chocolate pancakes.
Add some personalization with chips, nuts, or candies:
- Salted Caramel Chips (a serious favorite in our kitchen)
- White Chocolate Chips
- Pecan pieces
- Marshmallows (Smores Brownie Cookies?? Yes, please.)
- Peanut Butter Chips
- Chocolate Chips
- Reeses Pieces
- You get it…..just find a flavor that you love
Drop the dough onto the *parchment-lined* cookie sheet. I like to use my melon baller gadget, but you find what works for you. Bake the cookies for ABOUT 12-15 minutes. Check them out while they’re baking, and after the surface of the cookies gets shiny and begins to crack, you’re getting close. You know how it is…..you don’t want to overbake brownie cookies. They need to be soft, yet BAKED. I find that 12 – 15 minutes is a good range.
Let them cool for 5 – 10 minutes on the cookie sheet before moving them to a cooling rack.
That’s it. So ridiculously easy and so amazingly yummy. You will want to have these ingredients on hand at ALL times in the event that you need a quick treat.
